Red and Green pancakes on Christmas morning have been a tradition at our house since the 1960's. I vividly recall my dad making these in our basement on Christmas morning (yes, we had a stove in our basement) because he always made such a mess when he cooked that my mother would not let him use the kitchen stove! This recipe uses powdered buttermilk which you can find with the condescend milk at your grocery store. It keeps much longer than liquid buttermilk and you have it when you need it.

Add beaten egg, water, and oil.
Hand beat just until ingredients are combined. DO NOT OVER BEAT!
Divide the batter equally into two smaller bowls.
Add three drops of liquid red and green food coloring to each bowl and stir.
Pour onto a hot greased/oiled griddle and cook just until the top is covered with bubbles.
Turn and brown the other side. This only takes a few seconds.
Serve immediately with maple syrup.
