When you have a variety of ingredients in your pantry for which you have still found no use since the ONE time you needed them, and you need to keep your protein intake up and carbs low, you get creative and make up something new. The protein comes from whey protein powder and almond butter and the sweetness from raw, unfiltered honey. These were surprisingly tasty and filling. And, while those who strictly follow keto to the point of being zealots would argue "these aren't low carb", in comparison to traditional protein balls having 30+ grams of carbs per serving these are indeed "lower carb" and fit into a "low carb" lifestyle just fine. 😊
View original recipe on cookpad.comAdd the protein powder, coconut, and cocoa powder to a large bowl. Stir with a fork to combine, making a well in the center for the wet ingredients.
Add honey and almond butter to dry ingredients. Begin stirring together with the fork to get the honey and almond butter coated. Switch to mixing with clean hands, using your finger tips to start breaking up the clumps then eventually kneading with your whole hand until the mixture holds together in one large ball with no dry pieces remaining. You'll think this will never happen at first but trust the process, it will come together!
Once the mixture is fully combined and holding together, scoop out level tablespoons and roll each between your palms to form balls (you should get 12-14). Place each ball on a plate not touching. Cover with plastic wrap and refrigerate at least one hour. Then transfer to an air tight storage container and keep in the fridge for a great protein snack or breakfast!
