These soft and fluffy banana pancakes will be a hit for your next breakfast or brunch! The brown sugar enhances the banana flavor and also provides sweetness so these pancakes can even be eaten without syrup.
View original recipe on cookpad.comIn a large mixing bowl, combine flour, salt, and baking powder. Whisk to combine and set aside.
In a small separate mixing bowl, mash banana until smooth. Add in sugar, eggs, milk, oil, and extracts and whisk together until well combined.
Gently fold in the wet ingredients into the dry and mix well until a smooth batter forms.
Preheat griddle or pan to 300°F. Lightly grease the pan if not using a nonstick griddle or pan and pour batter onto the pan. I like to make 4” pancakes.
Cook the first side until bubbles form all over the top, around 2 minutes. Flip and then cook the other side for another 1-2 minutes.
Serve with sliced bananas, walnuts, whipped cream, or syrup. These pancakes are also amazing to use as a bun for your favorite breakfast sandwich! Enjoy!
