Finally Friday! If any of you have a baby shower this weekend—or just want to surprise a friend or family member who’s expecting—here’s the cake I made for my boss for the baby shower we threw at work. He was having a boy, so I made it blue, but you can totally switch it to pink if it’s for a girl 🎀. And if there’s no baby shower at all, no problem—you can still make it! Just use dark, milk, or white chocolate instead of the blue chocolate I used here. I’m not usually a big fan of artificial-looking stuff, but honestly, it turned out super cute and tasted amazing! I even bought those little sugar baby toppers and somehow got the frosting color to match almost perfectly. I didn’t get a “Pinterest-worthy” photo because I was in a rush to surprise him, but the important thing is how it turned out 😉 Want to know how I made it?
View original recipe on cookpad.comCAKE: Separate the egg yolks and whites. In a big bowl, mix the yolks with the sugar, oil, and milk until smooth.
Weigh and sift the flour. Add the salt and baking powder, and gradually mix it into the yolk mixture.
Stir in the vanilla. Now whip the egg whites until stiff peaks form. Gently fold them into the batter so it stays fluffy.
Preheat your oven to 380F/180C. Line a round cake pan with parchment paper, pour in the batter, and bake until golden and a toothpick comes out clean.
FROSTING: We’ll weigh out the butter (it should be at room temperature—if not, give it a quick zap in the microwave) and mix it with the powdered sugar.
Separate the eggs. In a bowl, mix the yolks with the softened butter and powdered sugar until it’s nice and creamy.
Melt the blue chocolate (Hobby Lobby 🛒) either in the microwave in short bursts or using a double boiler. Once it’s melted and smooth, stir it into the butter mixture.
Whip the egg whites until they form stiff peaks. Gently fold them into the frosting until you get a light, fluffy blue cream.
SYRUP: In a small pot, combine the water, sugar, and orange zest. Heat it up, stirring constantly, until the sugar fully dissolves and it starts to boil. Then set it aside.
Time to assemble: Once the cake is cool, level off the top and trim the edges if needed to make it nice and round (I used a smaller pan as a guide). Flip it upside down so the flat bottom becomes the top, and then slice it in half horizontally.
While the syrup is still warm, brush it over the bottom cake layer. Spread a layer of frosting, place the other cake half on top, brush with syrup again, and then frost the top.
Frost the sides too so the cake’s totally covered. Decorate however you like—I piped little frosting mounds and placed the sugar baby decorations on top, then sprinkled a little powdered sugar over everything.
