This Festive Apple Cake is the essence of fall π combining the cozy flavors of apples and cinnamon. A hint of sour cream makes it moist and tender! Itβs easy to whip up and impossible to resist. As it bakes, your kitchen will be filled with the inviting aroma of freshly baked apples and warm cinnamon. It also makes an awesome Thanksgiving dessert that promises to be a crowd-pleaser!
View original recipe on cookpad.comFirst mix all your dry ingredients together β flour, baking powder, cinnamon and salt. Keep aside.
Next, chop your apples into small cubes and keep aside.
Now, crack two eggs in a bowl, add the sugar and blend well. I used a hand blender.
Add the melted butter, sour cream, vanilla extract to this mixture and continue beating till everything is well incorporated.
Now add the dry ingredients to the wet ingredients and beat well till everything is nice and fluffy. Donβt over-beat.
Take an 8 inch round cake tin lined with parchment paper and pour some of this cake batter β perhaps 1/3 of it, enough to give you a half an inch base. Next add half of the apples as another layer making sure they are even.
Then layer with another third of the cake batter. Smooth it out gently over the apples.
Finally take the rest of the apples and the rest of the batter and mix it all together and place it on top carefully as a final layer. Smooth everything out gently.
Bake at 350Β°F for about 40 minutes. Check that the toothpick comes out clean. Cool in the pan for five minutes and then on a rack till itβs completely cool.
When the cake is fully cooled down, youcan sprinkle a little bit of icing sugar on top.
Now slice and enjoy with a nice cup of tea or coffee. Itβs such a delightful cake- moist and soft with tangy, sweet apples and warm cinnamon!
