This is my easier to make version of Vietnamese crepes, otherwise known as bánh xèo! These are Vietnamese pancakes, using the same batter but made just a bit chewier and filled with savory toppings.
View original recipe on cookpad.comMake the batter and set aside for 15 minutes at room temperature.
Sautee onion over medium heat in a medium sized pan for 2 minutes. Add in the shrimp and cook for 2 minutes then add in the pork and sautee all together for 3-4 minutes.
Set the proteins aside and heat up a small nonstick pan.
Spray the little pan with cooking spray. Turn to low-medium heat.
Pour about 1 large spoonful of batter to the pan (little less than 1/4 cup).
Cook for about 3 minutes on one side (or when small bubbles start to form then that’s when it’s ready to flip).
Flip and cook the other side for 2-3 minutes.
Serve with veggies and fish sauce.
