Line a baking tray with parchment paper.
Add the butter to a saucepan
Heat over medium heat.
Stir while the butter melts and foams.
Continue cooking until golden brown specks appear and the butter smells nutty.
Remove from heat
Let the browned butter cool slightly.
In a large bowl, add the brown sugar
Add the granulated sugar
Pour in the cooled browned butter.
Add the egg
Add the vanilla extract.
Mix until smooth.
Add the flour.
Add the baking soda.
Add the baking powder.
Add the cornstarch.
Add the cinnamon if using.
Mix until a dough forms
Fold in the mini chocolate chips.
Place the dough in the freezer for 10 minutes.
Scoop small dough balls using 1 teaspoon of dough each.
Place cookies on the baking tray with space between them
Bake for 7–8 minutes.
The edges should look lightly golden while the centers stay soft.
Let the cookies cool on the tray before moving them.
