From Jean Pare's Rookie Cookbook, the first adult cookbook I was given in my teens. This one is a winner with my son and nephew. It's quick and simple, and is delicious with just syrup or fruit and whipped cream. Once I even put leftover ribs and BBQ sauce on it.
View original recipe on cookpad.comPreheat oven to 450°. Place 9x9 oven-safe dish in while oven heats up.
Whisk together eggs, melted butter, and milk until one color. Add flour and whisk again until just combined. It's ok if the batter is a bit lumpy.
When oven has reached 450° remove the dish and pour in crepe batter. Replace in oven and set timer for 12 minutes. The crepe will go up the sides of the dish and puff up in the middle (as in photo). It's done when the edges are just golden.
Slice into four squares and top with whatever you'd like. A medley of peaches, strawberries, and blueberries is lovely.
