Adapted from my favorite chiffon cake recipe, this one packs such a strong matcha flavor and is the perfect melt in your mouth dessert:)
View original recipe on cookpad.comIn a small mixing bowl, add oil and milk and mix well
Add sifted flour and matcha powder to the mixture, mix well
Separate yolks and whites of 4 eggs, placing yolks into the mixture
Place egg whites in a larger clean mixing bowl, and whisk at medium speed
Slowly add in sugar as you whisk the egg whites, stopping when it reaches soft peaks
Pour 1/3 of egg white mixture into the smaller mixing bowl, fold batter until well combined
Combine the batter with the rest of the egg whites, fold until well combined.
Grease a cake pan and pour in the batter. Gently hit your cake pan against the counter to release any air bubbles
Bake at 325 degrees Celsius for 32-35 minutes or until a toothpick comes out clean
While the cake cools, add heavy whipping cream and sugar to a mixing bowl and mix on medium to high speed until stiff peaks. Make sure not to over whip the cream
Pipe the cream onto your cooled cake and dust with some high quality matcha powder to finish, and enjoy!!
