Maltagliati means "badly cut" handmade pasta, usually cut square or rhombus shaped.

Oil a bowl and add the pasta dough in it. Coat the dough with olive oil and allow to rest 35-45 minutes undisturbed.
While the dough rest, start prepping the sauce ingredients. Remove seeds and ribs of peppers. Cut the peppers straight into strips. Cut the end on an angle. Then cut the strip on the same angle and width forming the rhombus shape.
Repeat with the rest of the pepper strips. Cut the sausage on an angle or bias. It is easier to remove the casing from the sausage this way. Dice the onion, heat a pot with the butter. Add the sausage, onion, and peppers to the pot and start them, simmering.
Cover and stir occasionally. Take parchment paper and lightly flour the sheet. Take a little bit of the pasta dough about the size of a baseball, and roll it out as thin as possible. This is very important. They will swell double the thickness when boiled. Cut the pasta just like the pepper. They don't need to be perfect. As the name says maltagliati, "badly cut".
Boil the water with the salt and oil. Boil the pasta in batches. Finish the sauce adding in the remaining ingredients. Plate the pasta with the sauce on top. Serve, I hope you enjoy!!!!
