"What should I do with 1lb of ground chicken!!!?" My mind screamed, questioning myself! Well what I came up with, was a welcomed delight for this cold winter's day! I used it to make homemade Chicken Veg Dumplinz from Scratch. The following recipe is how my fear became a blessing! 💕 Hope you enjoy! 💕

Mix using these proportions, then measure the recipe amount.
To a large pot, add the vegetable broth and 3 LARGE (chunked or sliced) Carrots- add another 2 carrots if small. Bring to boil while Seasoning it with Salt, Garlic Powder, Onion Powder and Black Pepper. May add half stick butter if you choose.
In a Separate Pan, heat some oil and cook your ground Chicken with Salt, Garlic Powder, Onion Powder, Black Pepper and a couple dashes of Italian Seasoning. If, while cooking, pan runs dry, add some butter.
In a bowl, combine the 2c flour, 1Tbs Baking Powder, plus the 1 1/2tsp salt. Mix these dry ingredients and slowly add the 1c hot water and the 2Tbs Oil. Mix until smooth. Should be soft and not dry, if needed add a bit more water to the mix to get desired consistency.
By now, your boiling Pot of Veg Broth w/chunked Carrots should be ready for your dumplings. (Test the carrots with a fork to be sure it pierces through easily, carrots soft!)
Add your dough by spoonful at a time and keep at a boil for 5-6min. Should become Soft Dumplinz ❤️
Add the cooked, seasoned, ground chicken to the Veg Broth/Carrot Pot and let simmer.
Add 2-3c of Coconut Milk, or til desired consistency.
At this point, everything is cooked and ready to eat! Some may choose to simmer longer.... Serve and enjoy!
