Rasmalai is one of my very favorite Indian desserts! I used to miss it terribly when I first came to the United States. Rasmalai is an airy, soft cheese disc immersed in flavorful milk infused with cardamom and saffron and garnished with pistachios. It’s delicate, and elegant and the flavors are so satisfying! Now many Indian grocery shops carry it but it’s not always as fresh as I would like it or have the special taste that I crave. I remember we always used to have rasmalai as one of the sweet treats during special occasions like birthdays in addition to cake and kheer! View original recipe on cookpad.comPreheat the oven to 350°F and line a square 8 inch pan with parchment paper. In a bowl mix together the flour, and the baking powder and set aside.
In a separate bowl add the yogurt and sprinkle the baking soda and mix gently and set aside>>In another bowl, whisk together the oil and sugar till the sugar is well incorporated. You can use a whisk or you can use a hand blender. The mixture will become a little pale, but it’s okay if the sugar is not fully dissolved.
Combine the yogurt mixture with the oil and sugar mixture.
Gently add the dry ingredients and make sure to stir gently and combine everything well. There should be no lumps of flour visible. I added the vanilla at this stage and stirred well so it incorporates fully. You could add it to step 3.
Pour batter into the pan and bake for 30 minutes (350°F).
Make the tres leches mixture while the cake is baking. Warm the milk 30 to 45 seconds in the microwave. Now add the heavy cream.
Next, add the condensed milk and mix well. Add the cardamom powder and a few strands of saffron to this (warm) milk mixture.
I also added some pistachio cream to enhance the flavor because I had a jar of pistachio cream and the pistachio oil floated to the top and I poured that into the milk mixture.
Check the cake at the 30 minute mark with a skewer and if the skewer comes out clean then your cake is done. Poke the cake all over with the skewer and then pour 3/4 of the tres leches milk mixture all over the cake. (Reserve the rest for serving). Gently tip the cake pan a little to the left and right so the milk is distributed evenly.
Let the cake cool for 1 hour in the counter and put in the fridge for a couple hours or overnight.
Once the cake is fully cool you can frost it. Add some confectioners sugar to heavy whipping cream and whip it till stiff peaks form.
Gently spread this whipped cream all over the top of the cake.
Decorate with chopped pistachios. I also added some edible gold glitter to add a festive touch.
Serve the cake with a little bit of the reserved saffron tres leches milk mixture.
