These apple muffins are one of my family's favorite breakfast treats. The applesauce gives you all the flavor of apples with the smooth, fluffy texture of a traditional muffin. A cold winter morning pairs perfectly with these Warm and Toasty Applesauce Muffins.
View original recipe on cookpad.comPreheat oven to 375ºF. Line and lightly grease a muffin tin. Prepare the apples by washing, peeling, coring, and dicing them. Set out the butter, eggs, and milk to reach room temperature.
In a pot, add the diced apples, water (adjusting as needed), lemon juice, and cinnamon. Simmer over medium heat. Once simmered, lower heat to medium-low, cover, and cook for 15-30 minutes or until apples are tender when pierced with a fork. Stir occasionally to prevent scorching.
Remove from heat and mash the apples until smooth. Once smooth, add honey, tasting between each drop until desired sweetness is achieved.
For the muffins, add baking powder, cinnamon, flour, and salt into a bowl. Set aside.
In a separate bowl, beat together the butter and sugar for about 3 minutes. Add one egg at a time, mixing between each egg. Once eggs are incorporated, add vanilla extract and stir until fully combined.
Slowly fold in flour mixture and milk, stirring until combined. Mix in homemade applesauce until fully incorporated.
Separate batter into muffin tin and bake for 30 minutes or until an inserted toothpick comes out clean.
While the muffins are baking, prepare topping by melting the butter, allowing it to slightly cool.
In a separate bowl, measure out the cinnamon-sugar.
Once muffins are baked, allow them to cool in the muffin tin. Brush the tops with melted butter and sprinkle with cinnamon-sugar. Allowing to cool completely on a separate dish.
