Preheat oven to 425°F

Dice potatoes into 1/2 inch cubes.

Rinse potatoes in cool water until water runs clear.

Place potatoes into a large mixing bowl and coat with olive oil.

Add all seasonings and mix with wooden spoon.

Place in an oven safe dish and bake for 60 minutes or until potatoes are tender. Mix halfway through.
