All Mine Salsa

This was just a trial run because I was very disappointed with a pineapple salsa I had in a taco bar. I NEEDED to do better - I did! This was personal size, but I was nice enough to share.

Ingredients

1/2 c fresh pineapple, diced

1 t white onion, finely diced

1 sweet baby pepper, finely diced (contrasting color looks nice)

1/2 tsp Chives (optional)

Instructions

Step 1
Dice up pineapple and place in bowl
Step 2
Finely dice sweet pepper and add to pepper.
Step 3
Finely dice your onion and add to bowl. (Red onion might have been good...)
Step 4
Add your pinch of chives and mix.
