View original recipe on cookpad.comMake the streusel Mix together: 80g flour + 15g cornstarch + 70g brown sugar + 1g salt Add 35g softened butter and rub it through the dry ingredients with your fingers. Add 100g peanut butter and keep mixing/rubbing until you get crumbly chunks. 👉 Don’t knead it into one smooth dough. Put it in the fridge while you make the bread.
Make the dough Mix: * 160g warm water * 40g brown sugar * 6g yeast Leave for 5–10 minutes. Add: * 350g flour * 20g cornstarch * 4g salt * 50g beaten egg * 20g softened butter * 10g oil Mix, then knead for 8–10 minutes. If the dough feels dry, add the remaining water gradually, up to 180g. You want a soft, slightly tacky dough.
First rise Cover and let it rise for 60–90 minutes, until roughly doubled.
Divide Gently press the air out. Divide into 12 pieces, approximately 60g each. Shape each into a smooth ball.
Second rise Place them on your baking tray with some space between them. Cover and let them rise for 30–45 minutes, until noticeably puffy.
Lightly dip the top of the dough in water, then coat it with the streusel. Gently press it down so the streusel sticks.
Bake Bake in a preheated oven at: 175°C → 15–20 minutes Start checking around 15 minutes because the brown sugar + peanut butter topping can brown quickly. Let them cool for 10 minutes before eating.
