Prep & measure seasonings and put in one small bowl and plain flour in another.
Fry bacon in hot pan until crispy. This recipe usually use the fat rendered from the bacon. However, turkey is a bit lean, therefore we use 1/3 cup of oil in this step. Transfer bacon out from the heat. Add sausages or frankfurters slices into the same pan, using the same oil and cook until golden. Remove from the heat. Into the same pan, add plain flour. Turn the heat down to medium.
Whisk flour to mix well with the fat or oil. This is to create a thin roux. Once there's no lump, add diced onion. Sauté onion until tender.
Add in the seasonings. Stir to mix. Add the broth then toss in the beans.
Add potatoes. Adjust the amount of broth making sure it slightly covers the beans and potatoes. Stir few times.
Cover the pan and bring the beans to a gentle boil. Cook until potatoes are fork tender. When cooking, stir occasionally and add enough water or broth to make sure the beans and potatoes are not too dry. Keep them slightly covered with liquid. Once potatoes are cooked, add the bacon and frankfurters. Stir to mix. Adjust liquid and seasonings. Transfer to a serving bowl. Serve over rice 🍚
For a very soft, melt-in-your- mouth bean texture, cook the bean for 20-30 mins on simmer or gentle boil, add potatoes next and continue to cook until potatoes are fork tender. For an express or cheat version, use canned beans to skip the lengthy cooking time.
