This chicken pasta is quick and easy to make; simply grill chicken, boil penne, and mix together with Parmesan cheese and spinach.
View original recipe on allrecipes.comPreheat an outdoor grill for medium-high heat and lightly oil the grate. Spread butter, 1 tablespoon salt, 1 tablespoon pepper, and garlic powder over chicken breasts on a plate or cutting board.
Grill the chicken breasts until no longer pink in the center and the juices run clear, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a cutting board and cut into bite-sized pieces.
Meanwhile, bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Pour penne into a colander to drain.
Return penne to the pot. Add chicken, spinach, 1/2 cup Parmesan cheese, and red pepper flakes. Cook and stir over low heat until spinach is wilted but still green. Toss with remaining 1/2 cup Parmesan cheese; season with salt and pepper.
